Thanks to Jason S. for sending us this interesting article and summarizing it:
Here is a Harvard School of Public Health essay/blog on dietary fat and cholesterol.

The short summary goes like this:

• Saturated fats are bad. These cause all the bad diseases via inflating the LDL blood cholesterol (bad cholesterol and is a by product from carrying energy to cells in VLDL particles). Saturated fat sources are coconut, milk, cheese, and some from animal fat. They didn't discuss the role of insulin and blood sugar on the LDL count which I believe ties into the whole energy-density of foods.
• Unsaturated fats are good. These boost the HDL blood cholesterol (good cholesterol that cleans up the used up LDL cholesterol particles). Typical food sources are fish, avocados, etc.
• Trans fats are extremely bad. These are the partially hyrdogenated oils (e.g., margarine). Fast food or the cruddy boxed foods. These boost the LDL blood cholesterol drastically. Again back to my energy-density hypothesis but this may be because that trans fats are that "easy" to work with by requiring little body energy expenditure to produce the VLDL (energy carrying particles) that decay into LDL particles (after the body's cells use the energy).
• Cholesterol is neither good nor bad unless you get way too much of it. The human body produces 1000 mg (1 g) of cholesterol a day and actually is smart enough to make less cholesterol when we eat more cholesterol. But the cholesterol we eat is broken down into smaller lipids and then reassembled in the liver to make blood cholesterol. There are no links between dietary cholesterol intake and any of the major diseases. Typical sources are everything to some extent (because cholesterol is that important to cells) but eggs for one are a major source.
